The infusion in alcohol of sugar, extracts, peach aromas and peach seed give Persico liqueur a sweet taste, to the taste of peach, excellent for creams and pastry preparations. The Persico in particular is used for the preparation of sweet semolina, fried Piedmontese and other delicacies.
Persico liqueur is a historical product and tradition. The Persico is a pleasant liqueur, sweet, suitable for everyone.
In the 60s it was fashionable a simple cocktail performed with rum fantasy and this liqueur: the Rum & Peach.
The product is also used in the traditional Fritüra Dossa.
Fritüra Dossa or Polenta Dossa is a product similar to polenta based on durum wheat semolina.
Once this is cold, it is cut into small pieces in a rhomboid, breaded and fried-shaped.
It is also known as sweet semolina or breaded semolina.
In many traditional Piedmontese trattorias, in particular the Canavese, where the mixed fry to Piedmontese is served, Fritüra Dossa is one of the main components.
The peculiarity of Fritüra Dosso Piedmontese, compared to sweet semolina, is that it is flavored with "Persico" liquor (almond liqueur contained in peach kernels).
