Recipe of Le Speziali's limoncello
Easy to prepare.
Preparation for the infusion 30 minutes plus the rest time 15/20 days. To prepare the syrup 20 minutes.
- 6/8 untreated lemons;
- 500ml of alcohol at 95 °;
- 300 grams of sugar;
- 500ml of water.
Remove the lemon peels, without the white part, put them to rest in alcohol for 15-20 days.
After this time, prepare a syrup with the sugar and water, putting it on the fire until boiling, let it cool.
In a large bowl, strain the lemon peels, squeezing them well, adding the syrup, stir and bottle.
If it was too strong or too sweet, add water, if it was not very sweet, redo the syrup as I said above and then add it.
