Of course you have to have a good stock, otherwise they would lose their value.

 Need for four people:
two eggs;
G 100 Grated Parmesan;
G 100 fine Parmesan;
if needed two tablespoons of milk;
Salt, pepper and nutmeg as needed.
Knead it all, when you have obtained a very hard and blended dough, put a small block in the special passatelli appliance (I find it in every household store). Some long enough cylinders should be cooked in boiling broth for about 45 minutes. They don't ask for more cheese because you've already put plenty of it in the dough.
