PENNE WITH BLACK OLIVES, ANCHOVIES AND TOMATOES
Penne with black olives, anchovies and cherry tomatoes.
Ingredients for 4 people:
360 grams of pens (90 grams each);
Salt to taste.;
1 clove of garlic;
hot pepper, to taste;
extra virgin olive oil to taste;
salted anchovies, 3 per person;
250 grams of pachino tomatoes;
100 grams of pitted black olives.
In a saucepan, add the water and bring to a boil, salt and add the penne, turn and turn every so often, cooking them. In a pan, add a little extra virgin olive oil, garlic and anchovies, melt the anchovies completely. Cut the tomatoes into 4 pieces and add them to the oil making them lose some water with cooking, they must be wilted, but not overcooked. Add the black olives cut into rings. Drain the pasta and add it to the tomato sauce, anchovies and black olives.
