Chicken giblets risotto
Ingredients for 6 people:
- 600 grams of rice;
- 50 grams of butter;
- 100 grams of grated Parmesan cheese;
- 200 grams of chicken giblets;
- 1 egg; a sprig of sage;
- two teaspoons of cognac.
Prepare a risotto as usual and at the end add a little butter, it must be al dente, add an egg and mix well.
In a tall mold with a hole in the middle, greased and sprinkled with breadcrumbs, pour the risotto.
Put in a preheated oven, 120 °, for 10/15 minutes. In the meantime, prepare the chicken giblets by placing in a pan with the rest of the butter, the giblets and the sprig of sage. once cooked, sprinkle with cognac, salt and pepper to taste.
Turn the mold with the risotto over onto a serving dish and put the chicken giblet sauce in the center.
