Green sauce to accompany boiled meat, tongue, white fish or chicken
Needed: 1 clove of garlic;
1 bunch of parsley;
50g anchovies without bone;
1 teaspoon of capers;
2 hard-boiled eggs;
80g of extra virgin olive oil;
Preparation Chop the parsley, garlic, anchovies, very fine egg whites. Dissolve the egg yolks with a knife in a bowl and pour all the mince, add the oil and a little lemon and mix well.
Variants To give the sauce a more pronounced flavor, add a tablespoon of mustard.
Prepare the green sauce as described above but without adding eggs and add the mayonnaise.
